Our story

A honey only the heather makes

In late summer, the Scottish moorland turns purple as the heather blooms, and the bees work a single flower almost to the exclusion of all others. The honey they make is unlike any other — dark, fragrant, and so thick it holds its shape like a jelly. It is a slow honey, harvested only when the heather is in full flower. Calluna gathers this raw heather honey from the Scottish moors, taken from the hive, filtered and jarred with nothing added, so its thick, floral character comes through in every spoonful.

How it's made

The honey is gathered when the heather is in full flower, taken from the hive and lightly filtered with nothing added and nothing heated. Left raw, it keeps its thick, jelly-like texture and rich floral aroma.

How to use it

Spoon it thickly over porridge, toast or cheese, or stir a little into tea. Because it is so thick, use a warm spoon or let the jar stand in warm water to soften it. Keep the lid on and store it cool.

Good to know

How should I store it?

Keep the lid on and store it in a cool place. Stored well, raw heather honey keeps for a very long time.

How do I use it?

Spoon it over porridge, toast or cheese, or stir a little into tea. Because it is so thick, a warm spoon or standing the jar in warm water softens it.

Is it raw?

Yes — it is taken from the hive, lightly filtered and jarred with nothing added and nothing heated, so it keeps its natural texture and flavour.

What does it taste like?

It is dark and rich with a strong, floral aroma and a slightly woody, bitter edge — a complex, grown-up honey quite unlike a light blossom honey.

Why is heather honey special?

It comes from bees that work the heather flower, which blooms for only a few weeks in late summer. The result is a rare, slow honey that cannot be rushed.

Why is it so thick?

Heather honey is naturally thixotropic — it is so thick it holds its shape like a jelly, yet becomes fluid when stirred. It is one of the most distinctive textures a honey can have.
